Ingredients

  • 1 1/2 pounds Yukon Gold potatoes, cut into small cubes

  • 1 1/2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 3/4 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon dried parsley, optional

Directions

1. Preheat the air fryer to 400°F for 3–5 minutes.

2. Wash and dry the potatoes very well, then cut them into small even cubes.

3. Add the potatoes to a large bowl and toss with olive oil, garlic powder, paprika, salt, black pepper, and onion powder.

4. Place the potatoes in the air fryer basket in a single layer. Cook in batches if needed.

5. Air fry for 18 minutes, shaking once after 10 minutes, until the potatoes are crisp outside and tender inside.

6. Sprinkle with dried parsley if using, then serve hot.
