
These air fryer broccoli cheese patties are crispy outside, cheesy inside, and an easy way to turn broccoli into a side dish everyone actually wants to eat, whether you serve them as a vegetable side, light lunch, or simple meatless dinner.

3 cups broccoli florets, finely chopped
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1 large egg
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Olive oil spray
1. Steam or microwave the broccoli just until tender, then let it cool slightly.
2. Chop the broccoli very finely and pat it dry well with paper towels so the mixture is not watery.
3. In a bowl, mix the chopped broccoli, cheddar cheese, Parmesan, panko, egg, garlic powder, onion powder, salt, and black pepper.
4. Stir until the mixture holds together, then shape it into 6 thick patties.
5. Preheat the air fryer to 375°F for 3 minutes.
6. Lightly spray the basket with oil and place the patties in a single layer.
7. Spray the tops lightly with oil and air fry for 5–6 minutes.
8. Carefully flip the patties and cook for another 5–6 minutes, or until golden brown and crisp outside.
9. Let them rest for 2 minutes before serving so they hold their shape better.
Dry the broccoli well before mixing or the patties may turn too soft.
If the mixture feels loose, add 1–2 more tablespoons of panko.
Do not overcrowd the basket; cook in batches if needed.
A light oil spray helps the outside turn more golden and crisp.
Add a pinch of red pepper flakes for a little heat.
Swap cheddar for mozzarella or a cheddar-mozzarella mix.
Add 1 tablespoon finely chopped green onion for extra flavor.
Serve with sour cream, ranch, or garlic yogurt dip.
