1 1/2 cups all-purpose flour
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 tsp garlic powder
2 large eggs
3/4 cup milk
1/4 cup melted butter
1 cup shredded mozzarella
1/2 cup shredded cheddar
1 tbsp chopped parsley
2 tbsp grated parmesan for topping (optional)
1. Preheat the air fryer to 320°F and lightly grease a small loaf pan or baking dish that fits inside your basket.
2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and garlic powder.
3. In a second bowl, whisk the eggs, milk, and melted butter until smooth.
4. Pour the wet mixture into the dry ingredients and stir just until combined. Fold in the mozzarella, cheddar, and parsley.
5. Transfer the batter to the prepared pan and smooth the top. Sprinkle with parmesan if using.
6. Air fry for 20–22 minutes, or until the top is golden and a toothpick comes out mostly clean.
7. If the top browns too quickly, loosely cover with foil after about 12–14 minutes.
8. Let the bread cool for 10 minutes before slicing and serving.
Do not overmix the batter, or the bread can turn dense.
Fill the pan no more than about 2/3 full.
Loosely tent with foil if the top gets too dark before the center is done.
Let the loaf rest before slicing so the crumb sets properly.
Swap the cheddar for Monterey Jack or pepper jack for a different flavor.
Add chopped cooked bacon or green onions for a savory breakfast version.
Use Italian seasoning instead of parsley for a more herby loaf.
