½ cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
½ cup seasoned breadcrumbs
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon salt
¼ teaspoon black pepper
Oil spray
Ranch, marinara, or spicy mayo, for dipping
1. Freeze the cheese curds for 30–45 minutes before breading. This helps prevent the cheese from melting out too quickly.
2. Place flour in one bowl, beaten eggs in a second bowl, and breadcrumbs with garlic powder, paprika, salt, and pepper in a third bowl.
3. Coat each cheese curd in flour, dip in egg, then press into the breadcrumb mixture. For extra crispiness, dip again in egg and breadcrumbs.
4. Preheat the air fryer to 390°F for 3 minutes. Lightly spray the basket with oil.
5. Arrange the cheese curds in a single layer with space between each piece. Spray the tops lightly with oil.
6. Air fry for 6–8 minutes, shaking gently once, until golden and crisp. Serve immediately with dipping sauce.
Do not skip freezing. It is the main trick that keeps the cheese from leaking out.
Use a double coating if you want a thicker, crunchier crust.
Work in batches so the cheese curds do not touch or melt together.
Serve right away while the outside is crisp and the inside is still melty.
Spicy Cheese Curds: Add a pinch of cayenne pepper or chili powder to the breadcrumb mixture.
