2 large eggs
1 tablespoon milk
1 cup plain breadcrumbs or Italian-style breadcrumbs
1/2 cup grated parmesan cheese
1 tablespoon olive oil or cooking spray
1. Slice each chicken breast horizontally into thinner cutlets. If needed, lightly pound them so they are even in thickness.
2. Season the chicken on both sides with salt, black pepper, garlic powder, and paprika.
3. Prepare 3 shallow bowls: one with flour, one with beaten eggs and milk, and one with breadcrumbs mixed with parmesan.
4. Coat each cutlet in flour, then dip into the egg mixture, then press into the breadcrumb mixture until evenly coated.
5. Place the breaded cutlets on a plate or tray and let them rest for 10 minutes. This is the crumb-lock hack that helps the coating stay on better and crisp up more evenly.
6. Preheat the air fryer to 400°F.
