1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
1 large egg
2 tablespoons melted butter
1 teaspoon vanilla extract
1/3 cup mini chocolate chips
Nonstick cooking spray
Maple syrup, for serving
1. Preheat the air fryer to 320°F for 3 minutes.
2. In one bowl, mix the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the buttermilk, egg, melted butter, and vanilla.
3. Pour the wet ingredients into the dry ingredients and stir just until combined. Fold in the mini chocolate chips.
4. Let the batter rest for 5 minutes, then spoon it into a lightly sprayed silicone egg-bite mold, filling each cup about 3/4 full.
5. Air fry for 8–10 minutes, until the tops are golden and the centers are cooked through.
6. Let cool for 2–3 minutes, remove from the mold, and serve warm with maple syrup on the plate.
Do not overfill the silicone mold, because the batter rises as it cooks.
Use mini chocolate chips so the chocolate spreads evenly through each bite.
Do not drizzle syrup before air frying. Add syrup only after the pancake bites are cooked.
Let the batter rest for 5 minutes for a softer, fluffier texture.
If the tops brown too quickly, lower the temperature to 310°F for the next batch.
Banana Chocolate Chip Pancake Bites: Add 1/3 cup mashed ripe banana to the batter.
Double Chocolate Pancake Bites: Add 1 tablespoon cocoa powder and extra mini chocolate chips.
Cinnamon Pancake Bites: Add 1/2 teaspoon ground cinnamon to the dry ingredients.
Berry Pancake Bites: Replace half of the chocolate chips with finely chopped strawberries or blueberries.
Peanut Butter Chocolate Bites: Swirl 1 tablespoon creamy peanut butter into the batter before cooking.
