Prep Time: 15 minutes
Cook Time: 8–10 minutes
Total Time: 25 minutes
Servings: 6
Yield: about 18 churro bites
1 cup water
4 tablespoons unsalted butter
2 tablespoons granulated sugar
1/4 teaspoon salt
1 cup all-purpose flour
2 large eggs
1 teaspoon vanilla extract
1/2 cup granulated sugar, for coating
1 teaspoon ground cinnamon
2 tablespoons melted butter, for coating
Caramel sauce or chocolate sauce, for serving (optional)
1. Preheat the air fryer to 375°F. Lightly grease the basket or line it with perforated parchment paper.
2. In a medium saucepan, add the water, butter, sugar, and salt. Bring to a gentle simmer over medium heat until the butter is fully melted.
3. Remove the pan from the heat and add the flour all at once. Stir quickly until a thick dough forms and pulls away from the sides of the pan.
4. Return the pan to low heat for 1 minute, stirring constantly, to dry the dough slightly.
5. Transfer the dough to a mixing bowl and let it cool for 5 minutes.
6. Add the eggs one at a time, mixing well after each one, then stir in the vanilla. The dough should be smooth, glossy, and thick.
7. Use a small cookie scoop or spoon to portion the dough into bite-sized mounds. Place them in the air fryer basket with space between each one.
8. Air fry for 8–10 minutes, or until the churro bites are puffed and golden brown. Work in batches if needed.
9. In a small bowl, mix the sugar and cinnamon. Brush the warm churro bites with melted butter, then roll them in the cinnamon sugar until evenly coated.
10. Serve warm with caramel sauce or chocolate sauce, if desired.

Do not overcrowd the basket, or the churro bites will not cook evenly.
The dough should be thick and pipeable, not runny.
Coat the churro bites while they are still warm so the cinnamon sugar sticks well.
These taste best fresh, while the outside is still lightly crisp.
Add a pinch of nutmeg to the cinnamon sugar for a warmer flavor.
Serve with dulce de leche, chocolate sauce, or even a vanilla glaze.
Add a little orange zest to the sugar coating for a brighter dessert version.
