1 cup water
4 tbsp unsalted butter
1 tbsp granulated sugar
1/4 tsp salt
1 cup all-purpose flour
2 large eggs
1 tsp vanilla extract
For the coating:
1/2 cup granulated sugar
1 1/2 tsp ground cinnamon
For cooking:
nonstick cooking spray
Optional chocolate dip:
1/2 cup semisweet chocolate chips
1/4 cup heavy cream
1. In a small saucepan, bring the water, butter, sugar, and salt to a light boil over medium heat.
2. Add the flour all at once and stir quickly until a smooth dough forms and pulls away from the sides of the pan.
3. Remove from the heat and let the dough cool for 5 minutes.
4. Beat in the eggs one at a time, then stir in the vanilla until the dough is smooth, thick, and pipeable.
5. Transfer the dough to a piping bag fitted with a large star tip.
6. Lightly spray the air fryer basket with nonstick spray. Pipe churros into the basket in short strips, leaving space between each one.
7. Lightly spray the tops of the churros with cooking spray.
8. Air fry at 375°F for 10–12 minutes, or until golden brown and crisp on the ridges. Work in batches if needed.
9. Mix the cinnamon and sugar in a shallow bowl. While the churros are still warm, roll them in the cinnamon sugar coating.
10. For the optional chocolate dip, warm the cream until hot, pour over the chocolate chips, let sit for 1 minute, then stir until smooth. Serve with the churros.
Use a large star tip so the churros get the classic ridges and crisp edges.
Do not overcrowd the basket or the churros will steam instead of crisping.
Spray the piped dough lightly before air frying for better browning.
Coat the churros in cinnamon sugar while still warm so the mixture sticks well.
Add a little orange zest or extra vanilla to the dough for a warmer dessert flavor.
Swap the chocolate dip for caramel sauce or dulce de leche.
