2 cups sweet corn kernels, drained and patted dry
1 large egg
1/2 cup all-purpose flour
1/3 cup shredded cheddar cheese
2 green onions, sliced
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Oil spray
1. Pat the corn dry with paper towels.
2. Mix corn, egg, flour, cheese, green onions, garlic powder, salt, and pepper in a bowl.
3. Scoop small portions into a sprayed air fryer basket and gently flatten.
4. Air fry at 380°F for 5–6 minutes, then flip.
5. Cook another 5–6 minutes until golden and crisp.
Dry corn helps the fritters crisp instead of turning soggy.
Make small fritters so they cook faster and hold together better.
Do not overcrowd the basket.
Spicy: Add jalapeño or a pinch of cayenne.
Dippy Snack: Serve with ranch, sour cream, or sweet chili sauce.
