Ingredients

  • 1 lb fresh strawberries, hulled

  • 1 teaspoon lemon juice, optional

  • 1 teaspoon sugar or honey, optional, only if the strawberries are not very sweet

Directions

1. Wash the strawberries, remove the stems, and dry them very well with paper towels. Extra moisture makes them take longer to dry.

2. Slice the strawberries thinly, about 1/8 inch thick. Try to keep the slices the same thickness so they dry evenly.

3. Place the strawberry slices in a single layer in the air fryer basket. Do not overlap them. Work in batches if needed.

4. Set the air fryer to its lowest temperature, ideally 135–160°F. If your air fryer does not go that low, use the lowest setting available and check more often.

5. Air fry for 1 hour, then flip or gently move the slices. Continue drying for another 30–90 minutes, checking every 20–30 minutes.

6. The strawberries are ready when they look darker, slightly wrinkled, and chewy-dry. They should not feel wet or sticky in the center.

7. Let the dried strawberries cool completely. They will firm up more as they cool. Store in an airtight container.

Notes / Tips

  • Slice evenly. Thin, even slices dry faster and give the best chewy texture.

  • Do not overcrowd the basket. Overlapping slices trap moisture and make the strawberries steam instead of dry.

  • Use low heat. High heat can burn the edges before the centers dry.

  • Cool before storing. Warm strawberries can create steam inside the container and turn soft.

  • For longer storage, make sure the strawberries are fully dry and keep them in an airtight container in the refrigerator.

Variations

  • Cinnamon Dried Strawberries: Add a tiny pinch of cinnamon before air frying.

  • Lemon Strawberry Chips: Toss the slices with 1 teaspoon lemon juice for a brighter flavor.

  • Sweet Strawberry Chips: Sprinkle with a very small amount of sugar if your berries are tart.

  • Yogurt Bowl Topping: Dry the strawberries a little longer for a firmer topping.
