Ingredients

  • 4 large eggs

  • 1/4 cup cottage cheese

  • 1/4 cup shredded cheddar cheese

  • 2 tbsp milk

  • 3 tbsp cooked bacon, finely chopped

  • 2 tbsp red bell pepper, finely diced

  • 1 tbsp green onion or chives, chopped

  • 1/8 tsp garlic powder

  • Salt, to taste

  • Black pepper, to taste

  • Cooking spray or a little oil for the molds

Directions

1. Preheat the air fryer to 300°F.

2. Lightly grease 6 silicone muffin cups or small ramekins.

3. Add the eggs, cottage cheese, milk, garlic powder, salt, and black pepper to a blender. Blend until smooth.

4. Stir in the shredded cheddar, bacon, bell pepper, and green onion.

5. Pour the egg mixture evenly into the prepared cups, filling each about 3/4 full.

6. Place the cups carefully into the air fryer basket.

7. Air fry for 10–12 minutes, or until the egg bites are set in the center.

8. Let them rest for 2–3 minutes before removing from the molds.

9. Serve warm.
