Ingredients

  • 8 egg roll wrappers

  • 1 tablespoon sesame oil or olive oil

  • 1/2 pound ground chicken or ground pork

  • 2 cups coleslaw mix

  • 2 green onions, sliced

  • 2 cloves garlic, minced

  • 1 teaspoon fresh ginger, grated

  • 2 tablespoons soy sauce

  • 1 teaspoon rice vinegar

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt, or to taste

  • 1 tablespoon cornstarch

  • 1 tablespoon water

  • Cooking spray or a little oil for brushing

Directions

1. Heat oil in a skillet and cook the ground chicken or pork until browned.

2. Add garlic, ginger, green onions, coleslaw mix, soy sauce, vinegar, salt, and pepper. Cook for 2–3 minutes until the filling softens slightly and is not wet.

3. Let the filling cool completely.

4. Place filling on each egg roll wrapper, fold in the sides, roll tightly, and seal the edge with a little cornstarch slurry or water.

5. Preheat the air fryer to 390°F. Lightly brush or spray the egg rolls with oil.

6. Air fry in a single layer for 10–12 minutes, turning halfway, until golden brown and crispy.

7. Let them rest for 1–2 minutes, then serve warm.
