It’s a fast, satisfying breakfast that looks impressive but takes just a few simple ingredients.

2 slices thick-cut sandwich bread
2 eggs
1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
1 teaspoon softened butter, optional
Salt, to taste
Black pepper, to taste
1 teaspoon chopped chives, optional
1. Lightly flatten the center of each bread slice with the back of a spoon to create a shallow well.
2. Spread a little butter on the bread if using.
3. Sprinkle the shredded cheese around the edges of each slice, leaving the center open for the egg.
4. Crack 1 egg into the center of each toast. Season with salt and black pepper.
5. Place the toasts in the air fryer basket, using parchment paper if needed for easier cleanup.
6. Air fry at 370°F for 6–8 minutes, or until the egg whites are set and the toast is golden and crisp.
7. Add chopped chives on top and serve immediately.
Use thick-cut bread so the center holds the egg better.
Don’t overfill the middle, or the egg may spill over the edges.
For a softer yolk, check at 6 minutes. For a firmer center, cook a little longer.
Freshly shredded cheese melts more smoothly than pre-shredded cheese.
Add a pinch of chili flakes for a little heat.
Use mozzarella for a stretchier melt or cheddar for a stronger flavor.
Add a thin slice of ham under the cheese for a heartier breakfast.
Top with chopped parsley or green onion instead of chives.
