1½ lb (680 g) boneless skinless chicken breast, cut into chunks
12 oz (340 g) baby potatoes, halved
1 medium zucchini, sliced
1 red bell pepper, chopped
½ red onion, cut into chunks
3 tbsp melted butter
1 tsp garlic powder
1 tsp Italian seasoning
1 tsp paprika
1 tsp salt
½ tsp black pepper
1 tbsp chopped fresh parsley
1. Preheat the air fryer to 380°F (193°C).
2. In a large bowl, combine chicken, potatoes, zucchini, bell pepper, and red onion. Add melted butter and seasonings. Toss until evenly coated.
3. Divide the mixture between 4 large sheets of foil and seal tightly into packets.
4. Place the foil packets in the air fryer basket in a single layer.
5. Air fry for 12–14 minutes, or until the chicken reaches 165°F (74°C) and the potatoes are tender.
6. Carefully open the packets, sprinkle with parsley, and serve immediately.
Cut the potatoes into small pieces so they cook at the same rate as the chicken.
Do not overfill the packets to allow even air circulation.
Use chicken thighs instead of chicken breast for extra juiciness.
Add mushrooms, green beans, or broccoli for more vegetables.
