Crispy air fryer grilled cheese sandwich with a golden crust and extra melty cheese for an easy, comforting breakfast or lunch.
Prep Time: 5 minutes
Cook Time: 8–10 minutes
Total Time: 13–15 minutes
Servings: 2
4 slices sturdy sandwich bread
2 tablespoons softened butter or mayonnaise
4 slices cheddar cheese
2 slices mozzarella or Monterey Jack cheese
1. Preheat the air fryer to 370°F.
2. Spread butter or mayonnaise on one side of each bread slice.
3. Place 2 slices of bread butter-side down and add the cheddar and mozzarella. Top with the remaining bread slices, butter-side up.
4. Place the sandwiches in the air fryer basket in a single layer.
5. Put a rack on top to keep the bread from lifting while cooking.
6. Air fry for 4–5 minutes, then carefully flip.
7. Cook for 4–5 minutes more, or until the bread is golden and crisp and the cheese is fully melted.
8. Let rest for 1 minute, then slice and serve.
Use sturdy bread so the sandwich stays crisp and holds the melted cheese well.
The top rack helps keep the bread flat and toasts the sandwich more evenly.
Don’t overfill the sandwich, or the cheese may spill out before the bread fully crisps.
For the best melt, combine cheddar with mozzarella or Monterey Jack.
Use all cheddar for a stronger classic grilled cheese flavor.
Add 2 slices of cooked bacon for a breakfast-style version.
Add a thin slice of tomato only after patting it dry well, so the bread stays crisp.
Swap in sourdough or Texas toast for a thicker, crunchier sandwich.
