3 medium russet potatoes, peeled and shredded
1 small egg, lightly beaten
1 tablespoon cornstarch or potato starch
1 tablespoon finely chopped onion, optional
1 tablespoon melted butter or olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon smoked paprika, optional

1. Place the shredded potatoes in a clean kitchen towel and squeeze out as much liquid as possible. This is the key step for crispy hash browns.
2. Transfer the dry potatoes to a bowl. Add egg, cornstarch, onion, melted butter or oil, salt, pepper, garlic powder, and paprika. Mix until the potatoes hold together.
3. Shape the mixture into 6 flat patties. Keep them thin so the edges crisp instead of steaming.
4. Preheat the air fryer to 380°F / 193°C for 3 minutes.
5. Spray the air fryer basket lightly with oil. Place the patties in a single layer, leaving space between them.
6. Air fry for 12–15 minutes, flipping once halfway through, until the hash browns are golden brown and crisp on both sides.
7. Let them rest for 2 minutes before serving so the edges stay crisp. Serve warm with ketchup, sour cream, or eggs.
Do not skip squeezing the potatoes dry. Wet potatoes make soft hash browns.
Make the patties thin and even for the best crispy texture.
Do not overcrowd the basket. Cook in batches if needed.
For extra crispiness, spray the tops lightly with oil before cooking and again after flipping.
If using frozen shredded potatoes, thaw and squeeze them dry before mixing.
