
Air Fryer Mexican Street Corn Salad is loaded with roasted corn, cotija cheese, fresh lime, cilantro, and creamy dressing. An easy summer side dish perfect for BBQs, potlucks, and family dinners.

4 cups corn kernels (fresh, frozen, or canned and drained)
⅓ cup mayonnaise
¼ cup sour cream
½ cup cotija cheese, crumbled
¼ cup red onion, finely diced
2 tbsp fresh cilantro, chopped
1 tbsp lime juice
½ tsp chili powder
¼ tsp smoked paprika
Salt and black pepper, to taste
1. Add the corn to the air fryer basket and cook at 400°F (200°C) for 8 minutes, shaking halfway through, until lightly charred.
2. Let the corn cool slightly, then transfer to a large mixing bowl.
3. Add mayonnaise, sour cream, cotija cheese, red onion, cilantro, lime juice, chili powder, smoked paprika, salt, and pepper. Toss until well combined.
4. Garnish with extra cotija cheese and cilantro before serving.
For the best flavor, allow some corn kernels to develop dark charred spots.
Fresh lime juice gives a brighter flavor than bottled lime juice.
Serve slightly warm or chilled.
Add diced jalapeño for extra heat.
Mix in diced avocado just before serving.
Substitute feta cheese if cotija is unavailable.
