1 1/2 pounds lean ground beef
1/2 cup breadcrumbs
1 large egg
1/4 cup milk
1/4 cup finely diced onion
2 tablespoons ketchup
1 teaspoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
3/4 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped parsley, optional
Glaze
1/4 cup ketchup
1 tablespoon brown sugar
1 teaspoon yellow mustard
1. In a small bowl, stir together the ketchup, brown sugar, and mustard for the glaze. Set aside.
2. In a large bowl, mix the ground beef, breadcrumbs, egg, milk, onion, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and parsley just until combined.
3. Divide the mixture into 4 equal portions and shape into small oval mini loaves.
4. Preheat the air fryer to 380°F for 3 minutes and lightly spray the basket if needed.
5. Place the mini meatloaves in the basket with space between them and air fry for 8 minutes.
6. Brush the tops with the glaze, then cook for 2–4 more minutes, or until the meatloaves are browned and reach 160°F inside.
7. Let them rest for 5 minutes before serving.
Do not overmix the meat mixture, or the meatloaf can turn dense.
