Ingredients

  • 1 lb asparagus, trimmed

  • 2 tbsp all-purpose flour

  • 2 large eggs, beaten

  • 3/4 cup panko breadcrumbs

  • 1/3 cup finely grated Parmesan cheese

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Olive oil spray

  • Lemon wedges, for serving

Directions

1. Preheat the air fryer to 400°F / 205°C. Trim the tough ends off the asparagus and pat the spears very dry.

2. Toast the panko in a dry skillet over medium heat for 2–3 minutes, stirring often, until lightly golden. Let it cool slightly, then mix with the Parmesan, garlic powder, salt, and black pepper.

3. Place the flour in one shallow bowl and the beaten eggs in another. Dip each asparagus spear in the flour, then the egg, then coat it in the panko-Parmesan mixture.

4. Arrange the coated asparagus in a single layer in the air fryer basket. Lightly spray with olive oil.

5. Air fry for 8–10 minutes, until the coating is crisp and golden and the asparagus is tender.

6. Serve right away with lemon wedges.
