Servings: 4
Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes
Boneless skinless chicken breasts — 1 ¼ lb, cut into bite-size pieces
Ranch seasoning mix — 2 tablespoons
Panko breadcrumbs — ¾ cup
Grated Parmesan cheese — ⅓ cup
Garlic powder — ½ teaspoon
Smoked paprika — ½ teaspoon
Black pepper — ¼ teaspoon
Egg — 1 large
Olive oil or avocado oil spray — as needed
Ranch dressing — for dipping, optional
1. Preheat the air fryer to 380°F. Pat the chicken pieces dry with paper towels so the coating sticks better.
2. In one bowl, whisk the egg. In another bowl, mix panko, Parmesan, ranch seasoning, garlic powder, smoked paprika, and black pepper.
3. Dip the chicken pieces in the egg, then press them into the ranch-panko coating until evenly covered.
4. Place the chicken bites in a single layer in the air fryer basket. Spray lightly with oil and air fry for 10–12 minutes, flipping halfway, until golden, crispy, and cooked through to 165°F.
5. Serve hot with ranch dressing or your favorite dipping sauce.
Patting the chicken dry is the key step for a crisp coating that does not slide off.
Do not overcrowd the basket. Cook in batches if needed so the hot air can crisp every side.
For extra crunch, press the panko mixture firmly onto each chicken bite before air frying.
If the coating looks dry halfway through cooking, add a light spray of oil before finishing.
Spicy Ranch Chicken Bites: Add ¼ teaspoon cayenne pepper or chili powder to the panko coating.
Garlic Parmesan Ranch Bites: Add ½ teaspoon extra garlic powder and 2 tablespoons more Parmesan.
Buffalo Ranch Chicken Bites: Toss the cooked bites with a little buffalo sauce before serving.
Kid-Friendly Chicken Bites: Skip the smoked paprika and serve with ranch, honey mustard, or ketchup.
