2 cups all-purpose flour
1 tablespoon baking powder
3 tablespoons sugar
1/2 teaspoon salt
5 tablespoons cold unsalted butter, cubed
2/3 cup whole milk or heavy cream, plus extra for brushing
1 teaspoon vanilla extract
Strawberry jam and thick cream or butter, for serving
1. Preheat the air fryer to 340°F for 3 minutes. Line the basket with parchment paper.
2. In a bowl, whisk together the flour, baking powder, sugar, and salt.
3. Add the cold butter and rub it into the flour until the mixture looks like coarse crumbs.
4. Pour in the milk and vanilla, then gently mix until a soft dough forms. Do not overmix.
5. Pat the dough into a thick round, cut into 8 small scones, and brush the tops with a little milk or cream.
6. Air fry for 10–12 minutes, until the tops are golden and the centers are cooked through. Serve warm with jam and cream.
Keep the butter cold for taller, fluffier scones.
Do not flatten the dough too much; thick dough gives a better rise.
Leave space between the scones in the air fryer basket so the hot air can circulate.
Raisin Scones: Add 1/3 cup raisins or dried currants to the dough.
Lemon Scones: Add 1 teaspoon lemon zest for a brighter flavor.
Chocolate Chip Scones: Add 1/3 cup mini chocolate chips for a sweeter version.
