8 small baguette slices or thick toast rectangles
8 oz raw shrimp, peeled, deveined, and finely chopped
2 tablespoons mayonnaise
1 teaspoon soy sauce
1 teaspoon sesame oil
1 garlic clove, minced
2 tablespoons sliced scallions
1 teaspoon sesame seeds
¼ teaspoon salt
¼ teaspoon black pepper
Olive oil spray
1. Finely chop the shrimp, then mix it with mayonnaise, soy sauce, sesame oil, garlic, scallions, salt, and black pepper.
2. Spread the shrimp mixture evenly over each baguette slice.
3. Sprinkle with sesame seeds and lightly spray the tops with olive oil spray.
4. Air fry at 375°F for 6–8 minutes, until the bread is crisp and the shrimp topping is cooked through, opaque, and lightly golden.
5. Let rest for 2 minutes before serving so the toast stays crisp and the topping sets slightly.
Use thick bread or baguette slices so the toast holds the shrimp topping without getting soggy.
Chop the shrimp finely, but do not turn it into a completely smooth paste. A little texture makes the toast better.
Do not overcrowd the air fryer basket. Cook in batches if needed.
Check early at 6 minutes because thin bread can brown quickly.
The shrimp topping should be opaque and fully cooked before serving.
