1 large flour tortilla
4 large eggs
1/4 cup cottage cheese
1/3 cup shredded cheddar cheese
2 tbsp milk
3 tbsp cooked bacon, finely chopped
1 tbsp green onion, sliced
1/8 tsp garlic powder
Salt, to taste
Black pepper, to taste
Cooking spray or a little oil for the dish
1. Preheat the air fryer to 320°F.
2. Lightly grease a small round baking dish or pan that fits inside your air fryer basket.
3. Press the tortilla into the dish, folding and shaping the edges to create a crust.
4. In a blender or mixing bowl, combine the eggs, cottage cheese, milk, garlic powder, salt, and black pepper. Blend or whisk until smooth.
5. Stir in the shredded cheddar, bacon, and most of the green onion, saving a little for the top if desired.
6. Pour the egg mixture into the tortilla crust.
7. Place the dish carefully into the air fryer basket.
8. Air fry for 14–16 minutes, or until the center is set and the tortilla edges are golden and crisp.
9. Add a few extra green onion slices on top if desired.
10. Let the quiche rest for 3–5 minutes before slicing and serving.
Use a tortilla that is large enough to come up the sides of the baking dish.
Do not overfill the crust, because the egg mixture will puff slightly as it cooks.
Cottage cheese helps make the filling softer and creamier.
If the tortilla edges brown too quickly, loosely cover the top edges with a little foil for the last few minutes.
Let the quiche rest before slicing so it holds together better.
Store leftovers in the refrigerator for up to 3 days.
Replace the bacon with diced ham or cooked breakfast sausage.
Use mozzarella, Monterey Jack, or feta instead of cheddar.
Add chopped spinach, mushrooms, or bell peppers for a veggie version.
Add a pinch of red pepper flakes for a little heat.
Use turkey bacon for a lighter option.
Top with extra green onion or a little hot sauce before serving.
