Ingredients

  • 2 medium zucchini, sliced into thick half-moons

  • 2 medium yellow squash, sliced into thick half-moons

  • 1 to 1½ tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp grated Parmesan, optional

  • Chopped parsley, optional

Directions

1. Preheat the air fryer to 380°F if your model requires it.

2.Wash and dry the zucchini and yellow squash, then slice into thick half-moons.

3. Place the vegetables in a large bowl. Add olive oil, garlic powder, Italian seasoning, salt, and black pepper. Toss well to coat.

4. Arrange the vegetables in a single layer in the air fryer basket. Do not overcrowd. Cook in batches if needed.

5. Air fry for 10–12 minutes, shaking or tossing halfway through, until the edges are golden and lightly crisp.

6. Add Parmesan during the last 1–2 minutes if desired.

7. Garnish with chopped parsley if desired and serve warm.
