Ingredients

  • 2 cups zucchini, shredded and squeezed dry

  • 1 cup carrots, shredded

  • 1 large egg

  • 1/3 cup all-purpose flour

  • 1/4 cup plain breadcrumbs

  • 1/4 cup grated Parmesan

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Cooking spray

Directions

1. Preheat the air fryer to 375°F.

2. Shred the zucchini and carrots. Squeeze the zucchini very well with a clean towel or paper towels to remove as much moisture as possible.

3. In a bowl, mix the zucchini, carrots, egg, flour, breadcrumbs, Parmesan, garlic powder, onion powder, salt, and black pepper until combined.

4. Divide the mixture into 6 portions and shape into thin fritters.

5. Lightly spray the air fryer basket with cooking spray. Place the fritters in a single layer and lightly spray the tops.

6. Air fry for 5–6 minutes, then carefully flip and cook for another 5–6 minutes, or until golden and crisp on both sides.

7. Let them rest for 1–2 minutes before serving so they firm up a little more.
