2 medium zucchini, cut into thick fries
1 large egg, beaten
¾ cup panko breadcrumbs
½ cup grated parmesan cheese
1 teaspoon garlic powder
½ teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
Olive oil spray
1. Pat the zucchini fries very dry with paper towels so they crisp instead of steaming.
2. In one bowl, beat the egg. In another bowl, mix panko, parmesan, garlic powder, Italian seasoning, salt, and pepper.
3. Dip each zucchini fry in egg, then press it into the parmesan breadcrumb mixture.
4. Preheat the air fryer to 400°F / 200°C.
5. Place zucchini fries in a single layer and spray lightly with olive oil.
6. Air fry for 8–10 minutes, turning once halfway, until golden, crisp, and browned on the edges.
Do not overcrowd the basket. Space helps the zucchini fries crisp.
Cut the zucchini into thicker fries so the centers stay tender while the outside gets crunchy.
Add the salt to the coating, not directly onto the zucchini too early, so the fries do not release too much water.
Add red pepper flakes for a spicy garlic parmesan version.
Use extra parmesan after cooking for a cheesier finish.
Serve with ranch, marinara, or garlic yogurt dip.
