4 medium flour tortillas
2 cups shredded cheddar and mozzarella cheese blend
1 tablespoon softened butter or olive oil
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1 tablespoon chopped green onions, optional
1. Preheat the air fryer to 375°F (190°C).
2. Place 2 tortillas on a flat surface. Divide the cheese between them, then sprinkle with garlic powder, smoked paprika, and green onions if using.
3. Top with the remaining tortillas and press lightly
4. Brush both sides lightly with butter or olive oil.
5. Air fry one quesadilla at a time for 3–4 minutes per side, until golden, crisp, and the cheese is fully melted.
6. Let rest for 1 minute, then slice into wedges and serve hot.
Do not overfill the quesadilla, or the cheese may leak before the tortilla crisps.
Brush lightly with butter or oil so the tortilla gets crisp, not greasy.
Let it rest briefly before slicing so the cheese stays inside better.
For extra crunch, cook the second side 30–60 seconds longer.
Add shredded chicken for an easy air fryer chicken quesadilla.
Use pepper jack or Monterey Jack for a different cheesy flavor.
Add thin sliced jalapeños or red onion for extra bite.
