4 small onions, peeled
2 cups ice water
1/2 cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs
2 tablespoons milk
Olive oil spray
1. Peel the onions and trim just a little from the root end so they stay together.
2. Cut each onion into wedges from the top down, stopping before the root so the onion opens like a flower but does not fall apart.
3. Place the onions in ice water for 10–15 minutes to help the petals spread slightly.
4. Remove the onions and dry them very well with paper towels, gently separating some of the layers.
5. In one bowl, mix flour, cornstarch, garlic powder, paprika, salt, and black pepper.
6. In a second bowl, whisk the eggs with the milk.
7. Dip each onion into the dry mixture, making sure it gets between the petals.
8. Dip into the egg mixture, then coat again with the dry mixture for a light crispy crust.
9. Shake off any excess coating and lightly spray the onions with olive oil.
10. Preheat the air fryer to 390°F.
11. Place the onions in the basket with space between them and air fry for 14–18 minutes, until golden brown and crispy on the edges.
12. Let them rest for 2–3 minutes before serving.
