Here’s the simple hack behind Level 1. A thin, dry coating of cornstarch makes the nuggets extra crispy on the outside while keeping the chicken juicy inside. You don’t need a heavy batter or deep frying — just this pantry ingredient and your air fryer.

This is your Level 1 base recipe — simple, kid-friendly, and fast. No heavy batter, no deep frying, just seasoned chicken, a light cornstarch coating, and your air fryer

Ingredients
1 lb boneless, skinless chicken breast, cut into nugget-size pieces
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp paprika (sweet or smoked)
3 tbsp cornstarch (the secret ingredient)
1–2 tbsp oil or oil spray
Directions
Step 1
Cut the chicken breast into small, even pieces — about the size of classic nuggets. Pat them dry with paper towels so the seasoning and cornstarch stick better.
Step 2
Place the chicken pieces in a bowl. Add salt, black pepper, garlic powder, and paprika. Toss until every piece is evenly coated in seasoning.
Step 3
Sprinkle the cornstarch over the seasoned chicken. Toss again until all the pieces are coated in a thin, dry layer — there shouldn’t be any big white clumps.
Step 4
Drizzle 1–2 tablespoons of oil over the chicken or spray with oil. Toss lightly so the oil just barely coats the cornstarch. This helps the nuggets brown and crisp up in the air fryer.
Step 5
Preheat the air fryer to 390°F (200°C) for a few minutes.
Step 6
Place the chicken pieces in a single layer in the air fryer basket. Don’t overcrowd — it’s better to cook in two batches than to pile them up.
Step 7
Cook for 8–10 minutes, shaking the basket or turning the pieces halfway through cooking. Nuggets are done when they are golden and the chicken is cooked through (no pink inside).
Step 8
Serve hot with your favorite dipping sauces — ketchup, BBQ, ranch, or honey mustard.
Mini Hack: If your nuggets are not browning enough, add a light extra spray of oil halfway through cooking.
Note: Cooking time can vary slightly depending on your air fryer model and the size of the chicken pieces. When in doubt, cut one nugget in half to check doneness.

5. Serve immediately.
Variation 2: Spicy Buffalo Crispy Nuggets
Hot, tangy nuggets with a classic buffalo flavor — perfect for movie night or game day.
1. Melt 1–2 tbsp butter in a small pan.
2. Add 2–3 tbsp hot sauce (like Frank’s) and stir to combine.
3. Cook the crispy nuggets using the main recipe.
4. Place the hot nuggets in a bowl and pour the warm buffalo sauce over them.
