Here’s the simple hack behind Level 2. A light, even coating of baking powder on the wings gently dries out the skin and helps it puff and crisp up in the air fryer. You get that restaurant-style crunch — without deep frying.

Ingredients
2 lbs chicken wings (flats + drumettes)
1 tbsp baking powder (NOT baking soda)
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp paprika

Directions
Step 1 – Dry the wings
Pat the wings very dry with paper towels. This step is important for maximum crispiness.
Step 2 – Mix the dry coating
In a bowl, mix the baking powder, salt, black pepper, garlic powder, and paprika.
Step 3 – Coat the wings
Add the wings to the bowl and toss until every piece is lightly and evenly coated. You want a thin, dry layer — not a thick batter.
Step 4 – Preheat and add oil
Preheat the air fryer to 400°F (200°C) for about 3 minutes. Place the wings in a single layer in the basket and spray them lightly with oil.
Step 5 – Air fry
Cook at 400°F (200°C) for 22–26 minutes, flipping the wings halfway through. They’re ready when the skin is deep golden and very crisp.
Step 6 – Rest and serve
Let the wings rest for 2–3 minutes, then serve immediately with your favorite dipping sauces.
Mini Hack: If you want even more crunch, spray a little extra oil on the wings at the 15-minute mark, then cook until they’re extra golden.
Note: Cooking time can vary slightly depending on your air fryer model and the size of the wings. When in doubt, cut into one wing to make sure it’s cooked through (no pink near the bone).
Extra Note: This baking powder method also works if you’re using only drumettes, only wingettes, or even small chicken drumsticks.

Spicy, tangy buffalo-style wings with a buttery finish — just like in American wing bars.
1. Melt 2 tbsp butter in a small saucepan.
2. Add 2–3 tbsp hot sauce (like Frank’s) and stir to combine.
3. Cook the crispy wings using the main recipe.
4. While the wings are still hot, toss them in the warm butter–hot sauce mixture.
5. Serve with celery sticks and ranch or blue cheese dip, if you like.
